Bronte Illsley, Oak Plaza Meats
Bronte has been a butcher in Stirling for a staggering 52 years! He has won numerous awards for innovation during that time. There are five other butchers working for him and two casual servers who work during their busy times. He is a 4th generation butcher, with his son Kane also working in the trade.
The most important part of butchering for Bronte is selling quality meat and displaying his produce in the correct manner. “For me, the window display must be 1,000% right. It’s important to use the colour in the display to break up the different types of meat on offer.”
He enjoys showing other butchers how to display meat properly and training apprentices in the skills he has learnt over his long career.
It’s no surprise to learn that during Bronte’s time off he’s a keen water colour painter – hence the attention to colour detail in his window displays!
